Ingredients

US CUSTOMARY - METRIC
     1 tablespoon more virgin olive oil
     1 pound natural extra-lean flooring beef
     1 garlic clove — minced
     ½ cup onions — diced (cut very small)
     ½ cup red bell peppers — diced
     2½ cups candy potatoes — diced
     ¼ cup pork broth or water
     1 medium zucchini — quartered
     1 teaspoon Dijon mustard
     ⅓ cup tomato passata or tomato sauce of your choice
     ½ teaspoon dried oregano
     ⅛ teaspoon beaten red pepper — optional
     Salt and freshly flooring black pepper to taste
     Fresh parsley — chopped, for garnishing

FOR THE MEAL PREP

     5 cups cauliflower rice

Instructions

  1. In a solid iron skillet, warmth the olive oil over medium-high heat.
  2. Add the floor pork and garlic. Use a wood spoon to destroy up the floor beef while it cooks. Stir occasionally, and prepare dinner for about 7 minutes till the pork isn't any longer pink. Remove the pork from the pan, and set aside.
  3. Add the onions, red bell peppers to the identical skillet, and prepare dinner for 3-4 minutes or till the onions are soft. If necessary, upload somewhat little bit of olive oil to assist sauté the veggies.
  4. Add the candy potatoes and pork broth. Cook for 5-6 minutes. Put a lid at the skillet. The steam will assist prepare dinner the candy potatoes faster. Stir occasionally.
