Many, decades ago, California Pizza Kitchen (CPK) used to be a favourite of mine. It was my mother and my mother-daughter “date night” spot.

We’d seize dinner at CPK after which store or move to the movies. Of course, occasions have replaced and at the uncommon get collectively that date evening is an option, I opt for Dan to be my date and we have a tendency to widespread smaller, cozier, veg-friendlier establishments.

But a number of weeks ago, whereas we have been out on a Container Store run with my mom, we grabbed lunch at a CPK I literally hadn’t been to in 15 years.

Nutty Green Veggie Crunch Salad
This nutty inexperienced veggie crunch salad ranks amongst my all-time favourite recipes. It's chock-full of nutritious inexperienced vegetables and so, so fun to eat. The greatest of equally worlds wrapped up in a single crisp, fresh salad!

1/2 big head romaine, washed, patted dry, and shredded
1/2 to 3/4 big head inexperienced cabbage, cored and shredded
2–3 mini cucumbers, thinly sliced
1 bunch scallions, ends trimmed and thinly sliced
1/2 to at least one bunch cilantro, stemmed and finely chopped
1 cup shelled edamame*
1/2 cup chopped peanuts, almonds, or sunflower seeds (or a combination of all three—my favorite), plus extra for topping
2 tablespoons sesame seeds (optional)
Nutty Sesame Dressing
3 tablespoons creamy peanut butter, almond butter, or sunflower butter
1 1/2 tablespoons natural maple syrup
1 1/2 tablespoons tamari**
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons toasted sesame oil


For the salad: Add all salad foods to a big serving bowl.

For the dressing: In a medium blending bowl, vigorously whisk collectively all dressing foods till fully gentle and emulsified.

Pour as a lot of the dressing over the salad as desired, and toss to coat.

Serve as we speak and higher with extra nuts and seeds, if desired.source
