When I dreamed up this tasty concoction, I via means of no means imagined it's going to style this good.  Don’t get me wrong, I anticipated a yummy burrito, but there may be anything about this combination of meals that simply works.  Not basically does it work, it's past satisfying.  Sometimes I’ll have a vegetarian dish for dinner and really sense hungry back an hour or NULL later.  Not this one!  It was so filling, yet recent and healthy.  Try it on your subsequent meatless Monday!


One factor I love about this recipe is how simple it is.  Weekdays in my residence are crazy, and the final factor I really sense like doing on the quit of the day is spending invariably cooking and cleansing up.

For the rice:
2 cups raw brown rice, rinsed
3 cloves minced garlic
1/2 cup chopped cilantro
zest of one lime
juice of one lime
salt to taste
For the veggies:
3 russet potatoes, peeled and diced
3 bell peppers, diced
1 yellow onion, diced
15 oz can black beans, tired and rinsed
3 T olive oil
2 cups low sodium hen broth or vegetable broth
6 oz tomato paste
4 T chili powder
1 tsp cumin
salt to taste
Other fixins:
8 Whole wheat or gluten loose tortillas
2–3 cups Shredded monterrey jack cheese (optional)
Avocado (optional)
Sour Cream (optional)


Bring four 1/2 cups of water to a boil, upload in rice and garlic. Cover and simmer on low for about 40 minutes, or till rice is delicate and water is dissolved. Once rice is totally cooked, stir in cilantro, lime zest, juice and salt.

While the rice is cooking: In a big skillet, saute onion and bell pepper in olive oil till quite tender. Add potatoes, black beans, hen broth, tomato paste, chili powder, cumin, and salt. Bring combination to a boil, partially cover, and simmer till potatoes are fork tender, about 20-30 minutes depending on the measurement of the potato chunks. Stir it a pair instances whereas it's cooking to make certain all of the potatoes prepare dinner evenly.
