When you assume of noted Mexican food, tacos, burritos and salsas perhaps come to mind. However, Mexican Chalupas also deserve a seat on the table. This chalupa recipe is fundamental to make proper down to the crispy chalupa shell and should you love real Mexican recipes, this one’s a winner.

The Authentic Mexican Chalupas You Weren’t Expecting

Ingredients for Mexican Chalupas an real Mexican recipe.
Is A Chalupa Real Mexican Food?
Yes. Although, this perhaps isn’t what you’re imagining whenever you assume of Mexican Chalupas, right?  I get it. Since Taco Bell has lovely a lot bastardized real Mexican recipes and remodeled the originals into ridiculously stuffed renditions of noted Mexican food, it’s no surprise this crispy, subtle chunk may be overlooked.   This chalupa recipe truly seems sparse by comparison.  That’s ok.  This is an Authentic Mexican Chalupa and it’s the REAL DEAL.

How do I know?  My buddy and collaborator, Aurora, who hails from the Mexican state of Puebla shared her chalupa recipe with me and she is aware of a factor or NULL about real Mexican cooking.  She runs Aurora’s Mexican Kitchen and teaches courses concentrated on real Mexican recipes on Saturdays at her kitchen in Delray Beach.

When I say authentic, I imply it.  Aurora grinds her own corn for tortillas (and incidentally for her chalupa shells).  Everything from her kitchen is from scratch and it’s primarily founded on the meals and traditions she grew up on in Mexico.  Famous Mexican meals is truthful and really fundamental to train — as soon as you understand what to do.  Like those chalupas…

What Are Mexican Chalupas?
Chalupa is truly the identify of a boat, which this noted Mexican meals is called for.  The crispy masa shells are traditionally shaped to resemble the hulls of the ships.  In this chalupa recipe, they do double responsibility appearing as a “vessel” for salsa and different toppings.

What’s In A Chalupa?
Traditionally, Mexican chalupas are crammed with salsa whereas they’re being fried. You can use a ordinary red salsa, but I desire Aurora’s real salsa verde.

For ordinary Mexican chalupas, frivolously ideal the crispy shells with any of the following:

Queso Fresco
Shredded Lettuce
Fresh Cilantro
Shredded Chicken or Pork

adding salsa to the corn tortillas whereas they are frying within the hot oil.
What Are Chalupa Shells Made Of?
Chalupa shells are traditionally constructed from masa dough, shaped round the backyard of a shallow concave sort and fried. For simplicity’s sake,  and simply due to the fact I don’t anticipate you move by ability of the nixtamalization process, I’ve opted for corn tortillas on this recipe.

How To Prepare Chalupa Shells
In a heavy bottomed, medium sized skillet,  upload about 1/4″ of vegetable or canola oil and warmth over medium excessive heat.
When the oil is hot, but now not fairly smoking, relaxation a corn tortilla onto the hot oil to fry (it will float like a boat).
Cook the tortilla for about a minute earlier than spreading a number of tablespoons of salsa onto the ideal of the tortilla and continuing to cook dinner for 2-3 minutes till crispy round the edges.
(It’s ok if just a bit oil mixes with the salsa, you simply don’t desire to disguise it with the hot oil.

Chalupas are an real mexican recipe and the methodology of topping with salsa WHILE FRYING is unique.
How To Tell When Chalupa Shells Are Cooked
When the shells are crispy round the edges, use a slotted spoon or spider to softly move them to a sheet pan lined with paper towels to take up the extra oil. Don’t they appear delicious? Let me simply say that at this point, they odor lovely superior too!

Traditional & Not So Traditional Toppings
After the tortillas are fried, gown them the way you like.  Traditionally, they use very fundamental toppings, like queso fresco, scattered cilantro and shredded lettuce. A little bit of queso fresco and cilantro are very best for me, but my wife craves more. For him, I upload leftover rotisserie bird to the Mexican chalupas for a heartier bite. If you've leftover pulled beef and even some cooked shrimp they would also work  properly with this chalupas recipe.

What’s The Difference Between A Taco and a Chalupa?
Tacos are usually made with curved corn tortilla shells (either difficult or tender shells) which can be cooked first, after which crammed with toppings.
Tostadas are made with tortillas which can be fried flat after which garnished with different ingredients.
Mexican Chalupas are fried with the salsa on them, then tired and garnished with different toppings.

1 cup tomatillo salsa verde on this site, plus more for serving
1 cup queso fresco crumbled
2 cups pulled cooked bird or beef shredded

In a heavy bottomed medium skillet (that a entire flat tortilla can fit into) upload about 1/4" of canola oil.  Set over a medium to medium excessive heat.  When the oil is hot, but now not smoking, relaxation a tortilla on the oil (it will float- like a boat) and permit it cook dinner for about a minute, till bubbling.  Spoon 2 tablespoons of salsa into the middle of the tortilla and gently unfold it around, but now not fairly to the edge.  Continue to cook dinner for 2-3 minutes or till the tortilla edges and backside are crisp.  It's ok, if just a bit hot oil touches the salsa.

Transfer the chalupa to a tray lined with paper towels to drain.  Continue on this methodology with the relaxation of the tortillas.

Divide the bird or beef and queso fresco over the chalupas.  Garnish with cilantro and more salsa verde if desired.source
