Spicy Seafood Japchae

This recipe is one other variation of japchae (잡채)! I formerly posted kongnamul japchae that is a variation made with soybean sprouts. This time, the japchae is made spicy with seafood! I got the concept from the spicy seafood japchae my son and I loved at a Korean restaurant in NYC’s Koreatown. It had a good and blank spicy kick which was outstanding sufficient to get up our palates but no longer overpowering. It also had a beneficiant quantity of seafood. We thought it was a good switch from ordinary japchae.

If you’re no longer a fan of seafood, this recipe can definitely be grew to turn out to be right into a vegan japchae via omitting the seafood. Likewise, should you don’t like spicy food, merely omit the gochugaru (Korean red chili pepper flakes) for a moderate seafood japchae.

The principal ingredient, of course, is candy potato starch noodles referred to as dangmyeon (당면), also recognized as glass noodles. The most widespread approach to cook dinner the noodles for japchae is to boil in water for a number of minutes. Here, I soaked the noodles till soft, after which stir-fried in oil infused with gochugaru (Korean red chili pepper flakes). This technique yields a little chewier and bouncier noodles. If you're keen on softer noodles, you possibly can boil them first earlier than stir-frying.

For the seafood section of the dish, I used a small, tender squid (known as calamari in America), and small shrimp. The restaurant model also had small octopus (nakji, 낙지). You can merely use shrimp if you’d like.

The vegetables I used on this recipe are really primary — onion, carrot, mushrooms, and scallion. Use any mushrooms you've or like. If you've leftover spinach, cucumber, zucchini or bell pepper within the fridge, any of them might be vast on this recipe. You don’t desire a lot for this recipe.

How is japchae served in Korean cuisine? It’s most typically served as a edge dish (banchan), but it’s also loved as an appetizer, or over a bed of rice as a principal dish.
