The notion for this primary soup recipe of course got here from its namesake.  Or really, the filling of its namesake.  In an attempt to chop down on additional carbs, I decided to nix any kind of pie crust or biscuit topping…

Or…you may move the super-easy route, and simply ideal the soup with a number of little oyster crackers, that is exactly what I did.  (They took me a complete 10 seconds to pull out of the pantry!)

But the filling — err, soup — is really the star of the social gathering here.

It’s exceptionally wealthy and creamy (even with utilizing simply milk rather of heavy cream).  It’s chocked filled with tender hen and contemporary vegetables (that you’re welcome to customize with whichever veggies you prefer).  It’s primary to make (and in a position to move in about 30 minutes).  And additional than anything, it tastes simply identical to the delicious pot pie that impressed it.

CHICKEN POT PIE SOUP
This Chicken Pot Pie Soup recipe is primary to make, lightened up with a number of primary tweaks, and deliciously wealthy and creamy.


TOTAL TIME: 35 MINS PREP TIME: 20 MINS COOK TIME: 15 MINS


INGREDIENTS:


4 Tablespoons butter or olive oil
1 medium onion, peeled and diced
2 medium carrots, peeled and diced
2 celery stalks, diced
4 cloves garlic, peeled and minced
4 ounces button or child bella mushrooms, diced
1/3 cup all-purpose or white complete wheat flour
3 cups hen stock
2 cups milk
3 cups shredded cooked chicken
1 pound Yukon gold potatoes, diced
1 cup frozen corn
1 cup frozen peas
1 teaspoon Italian seasoning, home made or store-bought
1/2 teaspoon salt
1/2 teaspoon freshly-cracked black pepper

DIRECTIONS:


Heat butter in a huge stockpot over medium-high warmth till melted (or warmth the olive oil till it's shimmering).  Add onion, carrots, and celery.  Saute for 6-7 minutes, stirring frequently, till the onion is mushy and translucent.  Add within the garlic and mushrooms, and saute for yet another 2-3 minutes, stirring frequently, till the garlic is fragrant.

Stir within the flour till it's fully combined, and saute for yet another 1 minute, stirring occasionally. 

Gradually upload within the hen inventory and milk, stirring frequently.  Stir within the chicken, potatoes, corn, peas, Italian seasoning, salt and pepper till combined.

Bring the combination to a simmer (be cautious to now not convey it to a boil!), stirring occasionally so that the backside of the soup doesn't stick with the pan.  Then scale back warmth to medium-low, and proceed simmering the soup for 10-15 minutes till the potatoes are mushy and cooked through.
Taste the soup and season with additional salt and pepper, if needed.

Serve immediately, with crackers on ideal or at the side, if desired.source
