1 cup tomato passata (aka tomato puree) (Note 4)
1 cup heavy / thickened cream (Note 5)
1 tbsp sugar
1 1/4 tsp salt
Basmati or different Rice
Optional blitz: for an further modern sauce, combine the Marinade foods (except the chicken) in a meals processor and mix till smooth. (I don't do this)
Marinade: Combine the Marinade foods with the chook in a bowl. Cover and refrigerate overnight, or as much as 24 hours (minimum 3 hrs).
Cook chicken: Heat the ghee (butter or oil) over excessive warmth in a big fry pan. Take the chook out of the Marinade but don't wipe or shake off the marinade from the chook (but don't pour the Marinade left within the bowl into the fry pan).
Place chook within the fry pan and prepare dinner for round 3 minutes, or till the chook is white throughout (it would no longer actually brown attributable to the Marinade).
